Sally's Recipe Of The Week: Shrimp Salad

Shrimp Salad

Here is what you need:

1 pound small shrimp (cleaned, and shelled and no tail)

½ cup mayonnaise

½ to 1 TBS Dijon mustard

½ to 1 tsp fresh garlic

½ to 1 TBS fresh lemon juice

½ cup finely chopped red onion

½ cup finely chopped celery

2 to 3 TBS chopped cilantro

salt and pepper

Here is what you need to do:

For the shrimp I use uncooked frozen shrimp you could use frozen cooked shrimp that you thaw out but I don’t think it tastes as good*. So if using frozen raw shrimp let it thaw out then boil it in lightly salted water for about 2 minutes, if very small less time then, using a slotted spoon or spider toss the cooked shrimp in an ice bath to stop the cooking process. When shrimp is cold, strain it an let it dry off a bit.

* I stand corrected. I bought small cooked frozen shrimp at Doris and it was delicious. I took the shortcut because I still did not have a finished kitchen.

In a large bowl mix together the mayo, mustard, garlic, lemon juice and salt and pepper to taste. Taste and adjust to your liking.

Add the shrimp, cilantro, celery and onions to the bowl. Gently mix everything together. Season with salt and pepper and give it a taste. See if it needs more lemon, salt, cilantro, etc.

You can eat right away or chill in the fridge.To serve you can put on a plate and eat as is, place on some lettuce, stuff in a tomato, or avocado or eat on some toast! Let’s Eat.
