Sally's Recipe Of The Week: Chicken Satay With Peanut Sauce

Chicken Satay

Serves 4 – or can be appetizer

Here is what you need:

1 pound boneless, skinless chicken thighs or breasts

2 TBS fresh lime juice

2 TBS low sodium soy sauce

1 TBS honey

1 TBS Sriracha

1/2 TBS fish sauce or extra soy if you don’t have any

2 tsp ground ginger

2 cloves garlic, minced

wooden skewers, soaked in water for at least 30 minutes

oil to brush the grill

Here is what you need to do:

Cut the chicken into one inch strips.

In a large glass bowl combine the lime juice, soy sauce, honey, Sriracha, fish sauce, ground ginger and garlic. Add in the chicken and coat it well. Let it marinate for at least 2 hours, even overnight in the fridge. .Before you grill the chicken, take it out of the fridge. Thread the chicken on the skewers.

Grill over medium high heat about 2 to 3 minutes per side. Don’t crowd them, if you have to make them in batches. Serve on rice with the sauce or as an appetizer, using the sauce as a dipping sauce. Peanut Sauce recipe follows.

Peanut Sauce:

In a saucepan combine:

1 cup low sodium chicken broth

1 TBS honey

1 TBS low sodium soy sauce

5 TBS creamy peanut butter

1 TBS fresh grated ginger

2 tsp fish sauce

2 tsp Sriracha

1 TBS fresh lime juice

For serving: fresh chopped cilantro, chopped peanuts and lime wedges.

Over medium heat mix the ingredients, except the lime juice. Bring to a simmer, turn down the heat a bit and stir until the sauce thickens. Takes about 6 minutes. Remove from heat, stir in the lime juice. Pour into a serving bowl. Let's Eat!!
