Sally's Recipe Of The Week: Spicy And Sweet Ground Chicken Rice Bowls

Spicy and Sweet Ground Chicken Bowls

Serves 4

Here is what you need:

2.5 pounds ground chicken*

4 cups cooked basmati rice

4 to 5 cloves garlic, chopped

2 TBS fresh grated ginger

1 TBS soy sauce, plus more for serving

1 to 2 tsp red pepper flakes

½ cup honey

1 tsp salt

½ tsp black pepper

olive oil to brown the meat

Garnishes: sliced hot house cucumber, sliced radishes , sliced scallions

* Can use ground beef, turkey, pork or even Beyond Beef

Here is what you need to do:

Cook your rice according to package directions. I use the microwave rice in the pouches so I wait till the end to cook my rice since it only takes 90 seconds and you want the rice to be warm. If serving 4 you will need 2 pouches of rice.

In a large skillet brown the chicken, breaking it up while cooking.

When the chicken is almost completely cooked, add in the garlic, ginger, red pepper and honey and cook until the chicken looks caramelized.

This takes about 5 to 7 minutes. Then stir in the soy sauce, salt and pepper. Taste and adjust seasoning as needed.

In a bowl place one cup of warm rice and top that with a scoop of the chicken mixture. Garnish with cucumber, radishes and scallions along one side of the bowl. Serve with soy sauce on the side. Let’s Eat!!
